I want to start my own business in Wedding Consulting and Event Planning. Should I register my business as a sole proprietor or LLC from the beginning. I will be the owner and I may employ 1-2 people in the future.

The main question in your case is what is the chance of your business to be sued. Since LLC would give you an extra layer of protection in case your business is sued I would recommend you to opt for LLC if the business you are engaged in is somewhat risky. If not then you could as well do it as a sole proprietor, and organize as LLC later on if such need arises (for example if you would want to add a partner)
I am vaguely familiar with Wedding Consulting and Event Planning business, so I won’t be able to evaluate the risks of such business, but I presume you are in a good position to do it yourself.
