If I start a LLC am I able to get a paycheck from my company with taxes withheld?

Technically LLC is a flexible entity that can be elected to be taxed as either disregarded entity (or partnership), S-Corporation or C-Corporation. That give you an option to pay yourself in various ways – from just distribution of profits, to member salaries etc.
I would recommend you to consult an accountant to give you a better understanding of how to best structure your LLC and issue yourself a salary.
